Today we’re sharing one of our go-to lunches that we could eat every day. I had this salad at a friend’s house and now I’m hooked. It’s too easy to throw together and makes us feel a lot less guilty than our usual salami sandwiches (we still love you, salami sandwiches!). And don’t be fooled by the chicken nuggets on top! They are all-natural, sugar-free, and gluten-free. I love to keep a bag in the freezer, which makes this salad even easier.
Ingredients:
Fresh spinach, washed
Applegate Gluten-Free Chicken Nuggets, baked or microwaved and cut in half
Strawberries, sliced
Crumbled feta
Lay these ingredients on a bed of spinach and top with your favorite dressing. We love the classic oil and vinegar combo with a sprinkle of salt a pepper, but a balsamic vinegar (or a raspberry balsamic!) is delicious as well.
Warning: this salad may cause jealousy among other household members…
